100% Sauvignon Blanc. Younger vines taken from a few parcels in the Touraine region in the Loire Valley. The soil is rich with minerals and black flint. All stainless steel. Tasting note: Light to medium bodied with juicy citrus fruit, classic gunflint and wet grass.

All hand harvested. 20-30 year old vines on clay and sand soil in the Muscadet de Sevre et Maine appellation. This wine is made ‘Sur Lie’, which means on the ‘lees’. The lees are the fallen yeast cells in the barrel. The longer the wine sits on the lees the more flavor and added texture to the final product.
Tasting note: Light bodied w/ tart green apple fruit, herbaceous notes and high acidity.

100% Sauvignon Blanc-75 year old vines from the single parcel situated high on a hill in Maimbray (therefore the “vineyard of the angels”), harvested at less than 40 hl/ha. Fermented and aged in large conical foudre. Unfiltered. Tasting note: Lean and dry with grass, lemon zest, chalk, white ash. Beautiful minerality.

100% Sauvignon Blanc. A small run family estate from the famed Chavignol estate which is the most prized because of their angle towards the sun, great drainage and clay & limestone soil. The result is mineral-laden refreshing sauvignon blanc. Tasting Note: Light to medium Bodied with candied green apple, jolly rancher & herbaceous notes.

100% Grüner Veltliner. This is the one of the major white varieties grown in Austria. No oak at all which is typical for this grape. The steel preserves the freshness of the aromatics. The Wachau region in Austria has it’s own reating system similar to the German system that rates level of sugar in grapes at harvest. Federspiel is equivalent to Spatlese. This wine is very dry! Tasting note: Light with a slight creamy mouth-feel with notes of white pepper, pears, asparagus and grass. Complex and lengthy finish.

100% Chardonnay. Vines from Petit Chablis classification (3 levels-1.Petit 2. Chablis 3. Grand Cru Chablis). Patrick Piuze is a traditionalist and uses some old oak barrels (minimal use) in this cuveé. Chablis is filled with chalk and kimmeridgean soil (oyster shells & fossils).
Tasting note: Light, crisp, briny, chalky with fresh lemon & lime and a touch of creaminess.

100% Chardonnay. Very stony premier cru vineyard in the Cote de Nuits part of Burgundy. 2008 is known for great concentration and a ‘classic’ burgundy vintage. Old oak barrels used for fermentation and ageing. Tasting note: Medium bodied & crisp with yellow apple, lemon curd and minerals.
