What are the grape of the Jura
There is different AOP in Jura making different style of wines but
Chardonnay, savagnin (nature), PN, PG(only for sparkling) trousseau and poulsard are authorised.

Cotes du Jura AOP (can be all 3 colours)
Arbois (pupillin being the only commune that can appear)
L’etoile producing only whites
Chateau Chalon, producing vin jaune.

L’etoile, plainoiseau, quintigny, st didier
L’etoile AOP produces only white wines. The name comes from the tiny star shaped fossils in the soil.

The appelation produces only vin jaune.
What are the ageing and elevage requirement for vin jaune
Vin jaune=
must be aged until dec 15 of the 6th years following the harvest.
Min 60 months under the voile not topped up
Can be release Jan 1st of the 7th years following harvest.
Bottle shaped is a clavelin of 62 Cl
Min pot alc 12% max Rs 3G/l min must weight 204 g/l
What are the min ageing requirement and élevage for vin de paille in Jura?
Must be aged until November 15th of the 3rd year of harvest. Including at least 18 mths in oak.
May be release on dec 1st of the 3rd year following harvest.
Grapes are chard, savagnin, trousseau, poulsard.
Min must weight 320 to 420 g/l min pot alc 19% with 14% acquired.
Has to be harvest by trie.
What is the geology and the climate of Jura region?
The Jura regions lie in the east of burgundy and the west of Switzerland.
Jura is a region of forest mountain with a continental climate. Very harsh in winter.

White. Min 80% combined chard&savagnin
Rose/red: min 80% combined PN, trousseau, poulsard
Vin de paille
Vin jaune
Max RS: 3g/l except for vin de paille.

Pupillin is the only sub zone that can appear on label.
In total 12 communes produces Arbois
Can produce same wine than cote du Jura.

Explain the chara of the cremant du Jura AOP
White: min 70% combined chard, PN, trousseau
Rose: min 50% combined PN, PG, trousseau and poulsard.
Traditional method, wine must spend 9 months on lees before disgorgement.
May not be released for 12 month after date of tirage.
Min 3.5 atmosphere.
Hand harvest mandatory
Macvin du Jura AOP
White rose or red
Min alc 16% max alc 22%
Mutage= fortification with Eau de vie of at least 52% (aged in oak for 14 month min before mutage)
Min 12 month on oak for elevage

Can produce:
