What can you tell me about the acids components of wine?

A

Wine lies on the acidic side of the pH spectrum (on a scale of 0-14). This is because wine grapes contain acid and these acids transfer into the wine. Acidity in wines range from super sour at around 2.5 pH (high acidity) to very flat at around 4.5 pH (low acidity). You will notice that white wines tend to have higher acidity than red wines.

What can you tell me about ABV (alcohol by volume) in wines?

A

you can find a range of 10% to up to 21%, but this varies with the type of wine (red vs. wine) and whether the wine is dry or not. A white dry wine has about 10% ABV, followed by a dry red wine with 11.5% ABV. Other red and white wines range from 12.5-14% ABV). The sweet, fortified wine is about 21% ABV.
