What are the two types of yeast?
Top fermenting ale yeast or sacchyromyces cervisiae
And
Bottom fermenting Lager yeast or sacchyromyces patorianus
What does sacchyromyces cervisiae provide for ales?
Generally, esters in lovely that result in fruity Flavours for finished beers.
What is the other ale yeast’s deal?
Phenolic off Flavour gene (POF+) that results in clove/nutmeg/allspice/white pepper eaters
What does sacchyromyces patorianus provide for a Lager?
Eaters don’t reach the same level as ale yeast, letting hops and malt and grains be the stars for flavour
Why is water important for beer?
Makes up to 90% of the weight of beer. Dissolved minerals add key flavours, and modern brewers temper/augment their water to fit requirements/preferences.
What are the two types of barley?
2 row and 6 row barley

The kernels are plumper and lower protein, better for all malt beers

Cone of leaves, resinous globules (lupulin)inside, string holding all leaves together
