What is the climate of Greece?
Hot Mediterranean.
What is a climatic concern, especially on the eastern side?
Drought. The complete lack of rain in the growing season can cause water stress.

True. There are over 200 native varieties that thrive in the hot, arid conditions.
Describe a typical Xinomavro from Naoussa PDO.
A PDO for reds exclusively from Xinomavro. (compared to Nebbiolo). High levels of tannin and acidity; medium color that quickly fades to tawny; lack fresh fruit aromas. Long lived and develop spice and earthy aromas with age.
What is Nemea?
A PDO exclusively for reds from Agiorgitiko. The best fruit comes from vineyards in mid altitude.
What are the characteristics of Agiorgitiko?
Deep ruby color; high level of smooth tannins; low to moderate acidity; sweet spice and red fruit flavors. Age well with new oak.
What is the unique vine training method in Santorini PDO?
Basket-like to protect from strong winds.
Is Assyrtiko a red or white variety?
White. It is what Santorini is known for.
Describe a typical Assyrtiko white.
Dry, perfumed aromas and concentrated flavors of ripe citrus and stone fruit, balanced by high acidity.
What are Assyrtiko sweet wines known as?
Vinsanto.
How is a Vinsanto wine made?
Late harvested grapes, sun dried for up to 14 days, aged in old oak for a minimum of 2 years. Older wines show oxidative character of Carmel and nuts.
