Mashing
the act of extracting sugars available to ferment by breaking them down into raw materials (which are solids) and boiling them with water so we can have them in liquid form
Malting
the act of increasing the quality and quantity of sugars available to ferment
Fermenting
the act of adding yeast to the mash so that the yeast ferments the sugars, thereby creating alcohol.

Distilling
the act of separating the two alcohols (Methanol and Ethanol) from the water component of the fermented substrate and bring the alcohol content up to somewhere around 90% or higher

All brown Spirits (in a charred wooden barrel) and white rums
Which Spirits have not been aged?
All Clear spirits except some specialty items and all White Rums
What is Methanol
It is also known as wood alcohol. It has many uses but is highly toxic to humans. Caused death and blindness from incorrectly distilled alcohol.
What is Ethanol
The alcohol we drink. It is also toxic in very large doses. We can only ferment to a maximum of 14-20% alcohol by volume.
Martini: What does ‘Wet’ mean?
It means more Dry Vermouth. (1/2 oz. Dry Vermouth) And 1.5 oz of Spirit.
Martini: What does ‘Dry’ mean?
Less Dry Vermouth. 1/4 oz. of Dry Vermouth or “2 pops” and 2 oz. of Spirit.
Martini: What does ‘Xtra Dry’ mean?
Zero Vermouth and 2 oz of Spirit
Martini: What does ‘Burnt’ mean?
It means to Swirl in 2 drops of Scotch in the glass first. Everything else is normal.
Martini: What does ‘Dirty’ mean?
It means to add a dash of olive juice to the mixer. Everything else is normal.
Martini: What does ‘Perfect’ mean?
1/4 oz Sweet Vermouth & 1/4 Dry Vermouth.

May be served in a Rocks Glass OR a Martini Glass.

Shots: 5 Basic Categories
- Straight Up (1oz in 1oz shot glass)
- Built Shots (Combination of 2 or more types of alcohol combined into a 1oz shot glass)
- Shake and Strain (ingredients poured in shaker tin over ice and shaken, strained and poured into the appropriate glass. Due to mixing with ice you will always end up with more than 1oz of liquid. Therefor pour into larger glass such as rocks glass)
- Drop Shot (1oz shot dropped into juice, pop or other alcohol)
