What is the Solera system?
Maturation for sherry. Blends you her and older wines. Butts laid on top of each other and wine drops through.
Characteristics of Fino and Manzanilla sherry
Pale, dry, medium bodied. 15% abv
What is the ‘flor’ and why does it do?
Layer of yeast which protects the wine from air.
Can only grow if abv 15%
How are pale cream sherries made?
Young Finos sweetened by concentrated grape juice
How is Amontillado made?
Adding more alcohol to fino or manzanilla to kill off the flor and then the wine will oxidise.
How is oloroso made?
Fortified after fermentation to 18% abv
Characteristics and flavours of oloroso
Kernel and animal flavours. Deep brown and full bodied and high in alcohol.
How are cream sherries made?
Oloroso sweetened after fermentation
What is Pedro Ximenez?
Intensely sweet sherry
How is port made?
Extract colour and tannins during a short fermentation
Add grape-derived spirit to the partly fermented wine.
Aged and oaked.
