A

A

Test for lipids/fats.

Describe the test for lipids/fats.

A

Emulsification test.
Dissolve a small sample of lipid in ethanol.
Add solution to solution of food in a test tube 3/4 full of cold water.
White cloudy layer forms on top of the water.

A

Benedict’s test.
Add Benedict’s solution to solution of the food.
Put in boiling water bath for 5 mins.
Colour change: blue to brick red

Green- a little
Orange- medium amount
Red- large amount
