Food Tests Flashcards
What are the elements present in proteins?
Carbon, hydrogen, oxygen and nitrogen
How do we test for protein?
Using Buiret reagent {copper sulphate + sodium hydroxide}
How many types of amino acids are there?
20 different ones
What can amino acids do?
Join up in chains to make protein molecules
What happens when you test for protein?
The colour will change from light blue to purple
What are the elements present in carbohydrates?
Carbon, hydrogen and oxygen
What is an example of monosaccharide?
Glucose
What is an example of a polysaccharide?
Starch
How can we test for glucose?
Using Benedict reagent which turns from blue to brick red if glucose is present.
How can we test for starch?
Using iodine, which turns from orange to dark blue/ black.
What are the elements present in lipids?
Carbon, hydrogen and oxygen
What state are fats in at room temperature?
Solid
What state are oils in at room temperature?
Liquid
What are lipids made of?
1 glycerol molecule
3 fatty acids
How can we test for lipids?
We can test for lipids using the emulsion test. When ethanol is mixed with lipids and water the solution turns cloudy.
