Explain how microorganisms are used in the production of bread

A

Bread dough is mixed and kneaded, millions of air bubbles are trapped and distributed through the dough
Yeast in dough provides microorganisms which absorb the starches and sugars in the flour, turning them into alcohol and carbon dioxide gas
This gas expands the air bubbles, causing the bread to rise
