What is a SPOILAGE BACTERIA?
Spoilage bacteria will over time start the process of food products.
What is PATHOGENIC BACTERIA?
Causes food poisoning. These bacteria live on food.
What is a FOOD BORNE DISEASE?
An illness cause by contaminated by harmful substance or by pathogenic bacteria living on the food.
What is a TOXIN?
A toxin is a poison produces as a waste product by bacteria.
What is a MOULD?
= tiny plants/fungi which produce spores and grow on food
What is MYCOTOXIN?
= a naturally of purine toxin from mould?
What is a YEAST?
= do not cause food poisoning but are capable of causing spoilage
What is a VIRUS?
= genetic material surrounded by a protein coat. A they destroy living cells
What is CROSS CONTAMINATION?
Transferred directly or indirectly onto food
What is DIRECT CONTAMINATION?
In direct contact with the food • raw food • people • soil • pests • water • air • food waste
What is INDIRECT CONTAMINATION?
Movement of bacteria from a source to food via vehicle of contamination
