What is food poisoning?
Disease that results from ingestion of foods containing performing microbial toxins
-The mo do not have to grow in the host - ingestion can causee illness
What causes food infection?
Microbial infection caused by ingestion of pathogen - contaminated food dollowed by growth of pathogen in the host
Examples of food intoxications?
-Bacillus cereus
-Clostridium botulinum
-Staphylococcus aureus
-Mycotoxigenic fungi

What temp and pH does Campylobacter jejuni like? What is its resevoir?
-Temp 32-45 degrees
-pH 4.9 - 9.0
Reservoir is chicken
How is Campylobacter jejuni transmissed directly and indirectly?
-Direct via contact w infected animals, carcasses, water
-Indirect via consumption of contaminated food water
What in the onset of Campylobacter jejuni infection and what does it cause?
Onset is 2-7 days - vomiting
Rare - reactive arthritis, reiters syndrome, hemolytic uremic sydrome, Guillain-Barre syndrome
What is v.cholerae found in?
-Fish, free living, crustaceans, algae
When is trhe onset of cholerae infection known and what are the symptoms of it?
5 hours to 5 days - mostly mild painless - acute watery diarrhoea
What are most likely to be contaminated by L. monocytogenes?
Chilled ready to eat foods
What does the infection of L.monocytogenes cause?
-Inestinal onset 24hrs - sick for 1-3 days
Invasive onset - 2-10wks fever, headahce, confusion, dizziness, convulsions, death
What are 2 types of salmonella sp?
Salmonella enterica - serotype Typhimurium or Enteritidis
Salmonella bongori
What are the types of shigella spp?
-S.sonnei, S.boydii - common and self-limiting
-S.flexneri, S.dysenteriae - less common but more serious health impplications
What are Shiga toxubs encoded from in certain e-coli
