The route food has passed through from production to consumption
What does the term traceability mean?
Being able to trace food back through all stages of production
What does protected geographical indication (PGI) mean?
When food must be produced in a specific area e.g. Welsh lamb
What does protected designation of origin (PDO) mean?
When foods are produced, processed and prepared in one area e.g. stilton blue cheese
What does traditional speciality guaranteed (TSG) mean?
When foods are produced and have a traditional name and characterstics that make it different to others e.g. Gloucester old spot pigs
What does the term food miles mean?
The distance food has traveled from field to plate
What does the term carbon footprint mean?
The total carbon emissions produced by a person, organisation, event or product
