Changing food from one form to another that will lead to having better characteristics?
What are the better characteristics that food gains because of processing?
Increased shelf life, flavour, convenience and digestability
The transformation/changing of foods during processing can be in 2 forms, what are they?
Simple or more complex

Peeling or packing fruits

What are the 3 steps of processing?
- Raw materials acquisition
- Manufacturing
- Distribution
Why is it important to make sure the quality of the starting product in step 1 of manufacturing is of good quality?
Because the quality of the end product will depend on the quality of the starting product
What is it meant by quality requirement?
When you test products and make sure they meet required food safety regulations and customer requirements
Define sensory attributes in food processing
Aroma, taste and texture
Define nutritive value in food processing
Chnages in nutrients during processing - eg vitamins and minerals
What are the negative impacts of nutrients getting changed during processing?
Nutrients can be destroyed or removed
Define the challenges in monetary value of food processing
Products cost more than raw materials - eg price of salami and cheese vs price of meat and milk
Define benefits to shelf life in processing food
Processed products tend to have a longer shelf life
What are the benefits of legumes?
Good source of carbs, fibre and plant based protein
Lowers the risk of NCDS
What are the challenges of legumes?
Low starch and protein digestability
