What is histamine in aquaculture?
a biogenic amine produced by the decarboxylation of histidine by bacterial enzymatic activity
It is commonly associated with the spoilage of protein-rich products (e.g., fish) when they are stored improperly or exposed to certain bacteria

symptoms appear within 30 mins to a few hours after consumption
What are the symptoms of scromboid poisoning (histamine intoxication)?
flushed face and upper body

Why is histamine intoxication related to fish and not meat?
Fish are rich in histidine

Fishing - not chilled immediately after capture => bacteria act on histidine
Storage + transport - improper chilling allows bacterial proliferation
Processing - cross contamination from spoiled fish if not hygienic, delays in processing without proper chilling
Distribution - fluctuating temp levels
Consumer handling - improper storage at home
