what is the structure of fats?
saturated and are solid
what is the structure of oils?
unsaturated and are liquids
why are fats able to pack closely together?
no double binds, allow strong ldf to hold fat molecules together
why are oils not able to pack closely together?
distorted structure caused by the double bond
fewer ldf between molecules-less energy low bp than ftas
what happens to the bp as unsaturation number increases?
lower bp
what can unsaturated compounds do?
decolourise bromine solution quickly
as the number of double bond increases what is required more of?
bromine solution
