Lipids
Lipases digest lipids
-forms fatty acids (low pH) and glycerol
-found in the pancreas and small intestine
Carbohydrates
Amylase digests carbohydrates
-forms smaller sugars (maltose)
-found in the pancreas, small intestine and salivary glands
Protein
Proteases digest protein (eg. Pepsin in stomach pH 2)
-forms amino acids
-found in pancreas, small intestine and stomach
Core practical- pH on amylase
-Mix starch solution with amylase.
-Test different pH values using pH buffers.
-To test for starch add 2 drops of iodine and if starch is still present the solution will go blue-black. -Repeat with different pH buffers and make sure to use the same concentration and volume amylase starch solution.
-The pH that has no more starch present in the shortest time produces glucose in the shortest time and so is closest to the optimum.
