A

Scottish steelhead trout (grilled medium) served with smoked onion farro & quinoa, cilantro pumpkin seed pesto, an arugula & beet salad tossed in champagne vinaigrette, and garnished with dehydrated corn and pumpkin seeds.

*Allergies: wheat, fish, garlic, onion

Dressing-Sauce

  • Cilantro Pesto-Cilantro, garlic, pumpkin seeds, cumin, kosher salt, orange juice, lime juice, grapeseed oil, EVOO.
  • Smoked Onion Dressing- Smoked onion, garlic, grapeseed oil, apple cider vinegar, whole grain mustard, smoked paprika, evaporated cane sugar, kosher salt, black pepper.
  • Champagne Vinaigrette-Champagne vinegar, honey, evaporated cane sugar, kosher salt, black pepper, xanthan gum, grapeseed oil.

CAN IT BE VEG, VEGAN, GLUTEN-FREE? Can be made gluten-free by omitting the farro.

Our steelhead is from Scotland and sustainably raised in their natural habitat. GMO-free diet and fed per their species. Trout from the salmon family eats and looks like salmon.

A

Half chicken (boneless) with Moroccan spices and Chermoula served over chickpeas, olives, spinach, and roasted heirloom carrots, topped with Greek yogurt, mission fig compote, and cilantro sprigs.

Dressing-Sauce

  • Chermoula Sauce- Ras al Hanout, smoked paprika, kosher salt, cumin, garlic, parsley, cilantro, lemon juice, chicken stock, tomato sauce.
