Prepared foods stored in fridge below 5*
Prevents bacteria growth
E.g. salads, sandwiches
What are cook-chill foods?
Foods cooked in factory then chilled in blast chillers to remove heat quickly
Prevents bacteria growth
e.g. ready meals, desserts, pizzas
Why chilled foods?
Variety
Quality, colour or flavour not affected by chilling

Planes
Nursing homes

Advantages
Quick and easy to use, prepare, cook and eat
Wide variety available (e.g. vegetarian, low fat)

Uses a lot of packs going
Only small quantities (small no. of people)
