Wine-Maker: Anselme Selosse

History: Jacques Selosse started in 1947 in Avize. Botteling started in 1964. Take-Over in 1974, always working along the biodynamic, organic viticulture guidelines.

Philosophy: I work with the sun and the moon. Holistic belief in maintaining a harmoniously balanced ecosphere.

Vinification:
In Barrel (New burgundian or from Cognac) with indigenous yeast
Everything else is flexible according to the year, the wine and their particular needs
Fine Lee Elevation until bottling

Key Facts:
- 7.5 hectares spread over 47 parcels throughout the Côte des Blancs
- all parcels are vinified individually
- 5 to 10 years of storage in the bottles on the lees

Winemaker: Since 1984 it has been run by Pascal Agrapart
History:1894 by Arthur Agrapart in Avize - acquired vineyard land during the 1950s and ’60s

Philosophy: emphasizing natural viticulture and the expression of terroir
- spread over 70 parcels, the majority of which lie in the grand cru villages of Avize, Cramant, Oiry and Oger.
- Average vine age: 35 years, with the oldest vines in Avize over 60 years
- Pascal Agrapart is uninterested in being labeled as either organic or biodynamic
- No chemical pesticides or weedkillers are ever used, worked manually

Vinification: strong emphasis on viticulture, the average potential alcohol at harvest is very high here. No chaptalization. The grapes are pressed with a traditional Coquard vertical press, and fermentation is carried out with natural yeasts. Malolactic fermentation is completed for all the wines, and a portion of the best wines of the harvest are aged in old, 600-liter demi-muids.
The wines are typically bottled around the full moon of May, with no fining, no filtration and no cold stabilization.
