Unspecialised cells can differentiate to form specialised cells (eg. Palisade, root hair, xylem/phloem) to perform a function; eg. photosynthesis or water + sugar transportation

How are embryonic stem cells better than adult stem cells

A

Embryonic stem cells can differentiate into any type of cell we need. Adult some cells can only differentiate into a narrow range of cells. E.g. the stem cells in bone marrow can only differentiate into different types of blood cells.
