What are the functions of carbohydrates?
It acts as a energy source and helps control blood glucose and insulin metabolism.
What is intrinsic sugar?
Found in dairy foods like milk or yoghurt or in fresh cooked vegetables.
What is extrinsic sugar?
Sugars added to food like concentrated juice, cakes or biscuits
What is a simple carbohydrate?
Broken down quickly by the body to be used as energy such as fruits, energy drinks, sugar etc
What is a complex carbohydrate?
More nutrients packed in and higher in fibre like brown bread, pasta, oats, potatoes etc
What is dietary fibre?
Fibre keeps the digestive system healthy, fibre is a type of carbohydrate
What happens if we have a deficiency of carbohydrates?
Lack of energy, tiredness, fatigue and glucose levels will drop.
What happens if we have a excess of carbohydrates?
Coverts into fat and is stored in the body and leads to obesity.
Define monosaccharide:
The simplest carbohydrate, most of them are sugars
Define disaccharide:
Simple sugars in soluble water
Define polysaccharide:
The most abundant carbohydrate found in food
What is starch made up of?
Amylase+amylopectin
What is dextrinisation?
Starches within the food are broken down by a chemical reaction. Dextrin is brown, giving foods a golden brown colour.
What is caramelisation?
Simple sugars are broken down and new ones are formed. It’s a non enzymic browning method.
