What is a food additive?
A food additive is a substance which added to food to improve its properties.
Name the main types of additives
antioxidant-stops food reacting with oxygen and going off- Vitamin C
food colour-gives the food colour-caramel
flavour enhancer-improves the flavor of the food-monosodium glutamate
emulsifier-stops oil and water from separating- egg yolk lecithin
What happens to fat that is left out?
It becomes oxidized, producing products that have a rancid smell.
What do antioxidants help stop?
Fats from oxidizing.
What is the water loving part of the emulsifier called?
the hydrophilic head.
What is the oil loving part of the emulsifier called?
the hydrophobic tail.
What do the different parts of the emulsifier do?
The hydrophillic head bonds with water molecules and the hydrophobic tail bonds with oil, helping the mixture to not separate.
