What is ‘latent heat of vaporisation’?
The amount of energy needed to change one gram of liquid substance to gas
What is ‘specific heat capacity’?
The amount of heat one kilogram of a substance must absorb to lose or change its temperature by 1°C
Why is water a good solvent?
Ions and polar molecules can easily dissolve in it
What does cohesion produce?
Surface tension (where water meets air)
What are saturated fatty acids?
Molecules where the number of hydrogen atoms attached to the carbon skeleton is maximised
Only single bonds
What are unsaturated fatty acids?
Have 1+ double bond that kinks the carbon chain (can’t pack tightly)

Solid
