Molecules that do not mix well with water.
Lipids
A property of molecules that means water-fearing.
Hydrophobic
Glycerol bonded to 3 fatty acids.
Fat or Triglyceride
A molecule with 3 carbons, each bearing a hydroxyl group.
Glycerol
A molecule with a carboxyl group and a hydrocarbon chain, usually16 or18 carbon atoms in length.
Fatty acid
A fatty acid whose hydrocarbon chain contains one or more double bonds.
Unsaturated fatty acid
A fatty acid that has the maximum possible hydrogens because it has no double bonds in its hydrocarbon chain.
Saturated fatty acid
An unnatural form of fat associated with health risks.
Trans fat
Consists of glycerol, attached to a phosphate group and 2 fatty acids. The major component of cell membranes.
Phospholipid
The part of the phospholipid that interacts with water. Consists of everything except the hydrocarbon chains.
Hydrophilic head
The part of the phospholipid that does NOT interact with water. Consists of just the hydrocarbon chains.
Hydrophobic tails
Lipids in which the carbon skeleton contains four fused rings.
Steroid
A type of steroid that is a common component of animal cell membranes.
