- Digestion is a north to south process. Starts at the top and ends at the bottom. Begins with sight and smell - idea that we are going to eat and ends with the waste at the end:)
- The big three organs from a nutritional standpoint are:
Stomach - HCL - reducing stomach acid
Pancreas - Enzymes
Gallbladder - storing & releasing bile in response to dietary fat. - Digestion is fundamental to nutritional therapy.

- Healthy Fatty Acid deficiency is epidemic:
Musculoskeletal issues -
Endocrine issues - fats are precursors to some hormones
Cardiovascular issues - heart is a muscle with preferential source of energy from fat. mono unsaturated in particular
Immune issues - relationship between appropriate FA and processes of inflammation. Profound consequences on the immune system.
Allergies, skin problems, depression, etc.
