Chyme = food, saliva + gastric juice

• kills bacteria in food
• converts pepsinogen in to pepsin
• pepsin breaks down proteins into peptides

• secrete pepsinogen
• secrete gastric lipase - splits triglycerides into fatty acids and monoglycerides
What does the mucosa secrete
Mucous - a protective barrier, parents digestion of stomach wall

Instrict factor - for absorption of B12

• active form pepsin

• stimulates chief cells to secrete pepsinogen
