Alcoholic Fermentation Flashcards

1
Q

Describe alcoholic fermentation

A

Anaerobic process used to make breads, pastries, wine, beer, liquor, and soy sauce. Occurs in yeast cells. NADH sacrifices its H atoms to acetaldehyde (created when CO2 is removed from pyruvate) to create ethanol. This process allows NAD+ to be recycled and glycolysis to continue

Q

Describe the efficiency of alcoholic fermentation

A

Like lactic acid fermentation, only 2 ATP is produced, therefore also 2.2% efficient. However, 98% excess energy is stored in the alcohol
