Cancer Effects: nitrosamine formation

A

Garlic suppress formation of N-nitroso compounds (NOC)
- potential carcinogens
- need nitrite for synthesis
Allium compounds increase formation of nitrosothiols
- takes up available nitrite
- minimizes nitrite for NOC synthesis

End result - Decrease carcinogenic NOC
