Gin Fzz

Gin Fizz (also known as a Silver Fizz)
0.75 oz lemon juice
0.75 oz simple syrup
2 oz Beefeater
Prepare a cold Collins glass by adding 2 oz of Perrier. Whip shake, shake with ice. Strain cocktail into
glass slowly, top with more Perrier until the foam is flush with the top of the glass. Serve with straw on
the side.
Garnish: express and discard lemon twist
Note: Use a whole egg for a Golden Fizz and top with Champagne instead of Perrier for a Diamond

0.375 oz lemon juice

2 oz Beefeater
0.5 oz cream (eyeballed, large tin)
Egg white (large tin)
Prepare a cold Collins glass by adding 2 oz of Perrier. Whip shake, shake with ice. Strain cocktail into
glass slowly, top with more Perrier until the foam is just below the rim of the glass. Place glass in
freezer for 2 minutes to solidify layer of foam. Remove from freezer, pour Perrier slowly down center
of drink, taking care that foam does not spill down center of glass. A perfect Ramos will have an inch
or so of foam extending above the rim of the glass. Serve with metal straw on side.

2 oz Rittenhouse
Prepare neat glass by filling with crushed ice to chill. Combine ingredients in a mixing glass, stir.
Dump ice out of chilling serving glass, add 3 spritzes of absinthe to empty glass, strain cocktail into it.
Garnish: express lemon twist over the drink, manicure into a parallelogram and cut a 1-inch slit
lengthwise down the middle. Perch on rim of glass.

0.25 oz simple syrup
1.5 oz Galliano Ristretto
1.5 oz Luksusowa
Combine ingredients in a mixing glass and ice. In a shaker, eyeball 1 oz heavy cream (to avoid dirtying
a jigger), add 0.25 oz simple and whip shake. The idea is to whip the cream enough so its thick but still
pourable. Stir cocktail and strain into a Rona coupe. Slowly pour cream on top; it should be dense
enough to sit on top of the drink and not mix.
Garnish: none
Note: Sub El Dorado 8 for vodka for a Dominicana.
