What Is Sherry Gastrique

What Are Hen Of The Woods Mushrooms
• The Maitake mushroom (Grifola frondosa), also know as “hen of the woods”, is an edible and medicinal fungus that grows wild in Japan, China, and North America under oak, elm, or maple trees. Maitake (sometimes called maitako) means “dancing mushroom” in Japanese, as people would dance with joy upon finding it. Like all mushrooms, the maitake has a deep earthy flavor, but this one offers even more nuances to the thoughtful taster. For starters, it's more delicate than a shiitake and has a stronger savory side than a porcini. What Are Sunchokes
• Sunchokes are a tuberous root vegetable that belongs to the sunflower family. In its raw form they look very similar to ginger. They have a very earthy, nutty flavor similar to water chestnuts or potatoes. When cooked can give off a starchy texture with a very faint artichoke aftertaste. Taste amazing in soups. They are also called the Jerusalem artichoke.

What Is White Soy, And How Is It Different From Regular Soy
• White soy sauce, also called "shiro shoyu" in Japanese, is lighter in color and has a milder, sweeter flavor compared to regular soy sauce, primarily because it contains a higher ratio of wheat to soybeans, giving it a more subtle taste often used in dishes where you want to avoid overpowering the other ingredients with a strong soy sauce color; regular soy sauce has a more balanced ratio of wheat to soybeans, resulting in a richer, darker color and bolder flavor. Most brands use around 90% wheat and only 10% soybeans when making white soy.
