1: Proteins Flashcards
What are fibrous proteins?
Long threads of insoluble protein, collagen, elastin, keratin
What are globular proteins
Folded, compact. May dissolve due to weak hydrogen bonds.
What are non polar proteins?
Simple non polar h carbon groups in the r position. Insoluble and unreactive and hydrophobic.
What are polar proteins?
They develop partial charges involved h bonds, this increases the solubility and allowed h bonds to form
What are acidic proteins?
Negatively charged ions therefore a weak acid
And are basic proteins?
Positively charged ions.
What are basic and acidic properties?
Very hydrophilic and soluble, in globular proteins, these r groups form bonds in a 3D shape.
What are the importance of proteins?
Groups dissociate in water and become di polar ions. This has a buffering effect and opposes change in pH.
What bonds are formed between amino acids?
Peptide bonds in a condensation reaction. Water is formed.
