NV Valdespino “Inocente” Fino Sherry

Jerez, Spain NV Grape Varietal: Palomino Fino Appearance: Tan with golden hues Aroma: Salty, ripe apple. Taste: Crisp, slightly saline, hint of nuttiness. Pairing Suggestion: Oysters! Vineyard Notes: This is just about the only fino that is still produced from a single vineyard, albeit a large and somewhat varied one; it also wood-treated right from the first with its own yeasts, eschewing the stainless steel tank farms of their competitors. This usually fresh and young style wine is actually about 10 years old at bottling, having passed through ten criaderas.

Grape Varietal: Palomino Fino
Appearance: Amber
Aroma: Dried fruits and hazel nuts and a touch of toffee or caramel.
Taste: Very dry, wide and well balanced with refreshing acidity.
Pairing Suggestion: Bigoli.
Vineyard Notes: The wine undergoes biological aging under veil of flor for over 8 years and then fortified to above 17% for oxidative aging for 6+ years. There are 10 criaderas + the Solera.
