Wine Basics Flashcards
The raw material of wine?
The sugar found in fruit is the raw material used to produce wine.
Wine can technically be produced from the juice of any fruit that contains sugar, not just grapes.
What is wine?
A fermented beverage produced from the juice of any fruit, usually grapes.
The formula for alcohol fermentation
Sugar+yeast= ethanol + carbon dioxide+ heat
So when yeast comes in contact with sugar, it consumes the sugar molecules, breaking them down into major waste products: ethanol and carbon dioxide. The process also produces heat due to the yeast’s metabolic activity.
What is a varietal
The particular subspecies or type of grape.
Vitis vinifera
The one species of grape that makes up 95% of wine in the world. “The wine grape”
Characteristics of wine
Sugar, acidity, tannins, easy fermentation, biochemically complex
Tannins
Long chain phenols found in all plant life but very rarely in fruits. Complex chemicals that affect the taste, color and mouthfeel of wine.
Viniculture
The winemaking practices and procedures used to produce wine.
Viticulture or terroir
The agriculture decisions made while the grapes wee growing and the specific environment where those grapes were grown.
