Maturity of the grapes
As they ripen, other physical changes take place inside them as the seeds come to reproductive capacity. Flavones develop, pigments darken, and tannins mature and begin to soften. This is the determination of most vineyards harvest time.
Hang time
The period in which grapes grow riper the longer they are allowed to hang on the vine.
Old vines
Vielle vignes (French)
Vintage
The annual growing cycle of vines.
Non vintage
(Nv) wines bottled without vintage dates. These wines are made from more than one year’s harvest.
Grafting
An agricultural technique for propagating certain plants that involves taking a cutting from one plant and grafting or attaching it to another.
Canopy management
Involves pruning the canopy to develop a desired result.
