What does AGHE mean?
Authorised Game Handling Establishment
-Specific plants for the processing of wild meat, where the inspection will be carried out by an OV and a MHI from the FSA
What is the definition of farmed game?
- Traditionally a wild animals kept as domestic animals
Describe the AM/ PM protocols of wild game
-AM: not done, a declaration from the hunter needed in large wild game
-PM: only completed by OV/MHI when carcasses taken to an AGHE
In small wild game PM only completed by OV/ MHI in 50 carcasses if taken to an AGHE
What is the problem with wild game safety?
Rely on hunter and trained person’s honesty regarding pathology and testing
Does FCI relate to game animals?
- Only if farmed game: Health Certificate
- Wild game has a Hunter’s declaration (HD) for large wild game
- HD not needed in smalls but it is recommended
What are the exemptions to the legislation?
- If wild game shot for private consumption no legislation applies
- If you supply small quantities to final consumer/ local retailer (no vet inspection needed but need LA authority) RESPONSIBLE FOR SAFE MEAT
- Supply game/ feather to AGHE you are a food business and must be registered with LA and comply with regs, no vet inspection needed but trained person declaration needed.
If you are a food business dealing with wild game meat what must you have?
- If you sell on carcasses to wholesale/ retail consumers you class as a FBO.
- Instead of registering with your LA you must contract the FSA to obtain an AGHE license. You must comply with Hygiene and HACCP based system in place. Only accept large game that has been examined by a trained person.

Who counts as a trained person?
- someone who has sufficient knowledge of pathology of wild game, and of production, handling of wild game meat after hunting to undertake initial exam of wild game on the spot
- Doesn’t have to be the hunter but the hunter still needs to report to the trained person any odd behaviour before killing
- If trained person unavailable all viscera expect intestines + stomach must accompany body
- Qualified professionals e.g. Vets, doctors, EHOs, MGIs automatically qualify
What must a trained person do?
- Examine body and if large the viscera too
- Training provided by Lantra or NGO
What must a large game trained persons declaration include?
- Date, time, place of killing
-States that:
No suspicious environmental contamination
NAD behaviours observed before killing
NAD characteristics found during examination
(if suspects any of the above trained person must inform competent authority)
-Numbered
What are wild boar susceptible to?
Trichinellosis: will be tested if presented to AGHE
-Head, diaphragm must accompany
What viscera must accompany a deer carcass?
-Doesn’t need head or viscera as long as a trained person declaration is present
If there is no trained person declaration accompanying a large wild game carcass what must be presented?
- the head, heart, lungs, liver, not stomach or intestines
How do AGHEs deal with the dirtier nature of wild game?
- Separate facilities for reception/ storage of unskinned carcasses of farmed game slaughtered at the farm and for wild game
- Daily inspections by MHI, monthly by OV
- Separate large/ small
