It’s aged in stainless steel and unlined concrete tanks that allow the wine to breathe. That in combination with cooler climate in Monterey County, it gives this wine more natural freshness and it’s vibrant acidity

When tasting this wine, it’s almost like you’re taken to the vineyard where it’s made.

Cold fermentation - ferment at around 45-60degrees C, essentially slowing down the yeast’s metabolism. Think of it as giving the Yeast a slow leisurely train ride rather than a high-speed express. This pace allows the wine to retain more esters, the compounds that allow for the fruity and floral aromas. Another great reason for cold fermentation is that it reduces the production of fusel alcohol(harsh or burning-like in flavour, which is balanced out in red wine by tannins and oak). In white wines you want your alcohol to be exclusively ethanol.
Malolactic fermentation aka malo aka MLF - a process where tart malic acid is then converted into softer, creamier lactic acid. This same process also reduces the acidity in wine and releases CO2 as well. Technically it isn’t actually fermented because the process doesn’t use yeast, instead it uses Oenococcus Oeni a bacteria that converts malic acid into lactic acid. This gives with wine a nice creamy, oil-like texture in the middle of your tongue. It gives the wine a nice marvelous, velvety texture

Describe our Rosé

Pale apricot color with aromas of pomegranates, grapefruit, rosemary, lavender and peaches. Fresh and delicate, yet fragrant and flavorful, with a medium body and bright acidity. Lovely fresh pink fruit.

Comprised mostly of Grenache, Cinsault, and Vermentino, it is both unusually concentrated though not remotely heavy-and atypically flavorful for the category while maintaining the sense of restraint and subtlety that has made Provence the global stylistic leader for wines of this type. The aromas and flavors are impressively pure and well defined.

What is Chardonnay and how would you describe it

If you like the idea of creamy, rich white wine in your glass, you’ll love the classic style of oak-aged Chardonnay wine.

What is Pinot Grigio and how would you describe it

A

On the nose, Pinot Gris typically presents ripe pear, apple, and peach notes. In cooler climates, it may lean towards citrus and green apple, while late-harvest expressions evoke tropical fruit, honey, and spice. Skin contact can produce an ‘orange’ wine with deeper, more exotic aromas.

On the palate, styles range from light and crisp with high acidity to full-bodied and rich with more moderate acid. Wines can be dry or sweet, especially when late harvested or affected by Noble Rot. Rosé Pinot Gris offers a unique blend of crisp white and light red characteristics. In its multitude of expressions, the grape encapsulates the art and range of winemaking.

What to expect: Pinot Gris is called Pinot Grigio in Italy, and it’s the world’s largest producer. Usually totally dry with brilliant acidity and a bitter almond note, Italian Pinot Grigio is normally considered the lightest and freshest. But, depending on where you look in Italy, you can find several different styles. The least interesting often come from the flat Venetian plain, so look to the Alpine foothills for the best examples.

Alto Adige: Alto Adige Pinot Grigio is all about ripe stone fruits, heady notes of ginger, floral nuances, and refreshing acidity, paired with weighty body and texture, some even showing some barrel aging aromas of smoke and spice. Alto Adige produces world-class, cellar-worthy Pinot Grigio and also happens to be one of the world’s most beautiful wine regions.

Friuli-Venezia Giulia: Known for its textured Pinot Grigio and the unique ‘Ramato’ style (skin contact wines), Friuli’s wines exhibit ripe stone fruits, floral hints, and subtle spice. These, paired with a refreshing acidity and fuller body, showcase the region’s exceptional winemaking.

What is Sauvignon Blanc and how would you decribe it

A

A popular and unmistakable white wine that’s loved for its “green” herbal flavors and racy acidity. Sauvignon Blanc grows nearly everywhere and thus, offers a variety of styles ranging from lean to bountiful.

On the nose, expect pungent, in-your-face aromas ranging from freshly cut grass, peas and asparagus, to tropical and ripe passion fruit, grapefruit, or even mango.

On the palate wines taste light bodied with racy acidity and moderate alcohol.

What is a white Bordeux and how would you describe it?

A

Sometimes light and crisp, other times rich and creamy, Bordeaux White Blends typically consist of Sauvignon Blanc and Semillon. Often, a small amount of Muscadelle or Sauvignon Gris is included for added intrigue. Popularized in Bordeaux, the blend is often mimicked throughout the New World.

Sauvignon Blanc – A major grape in white Bordeaux, Sauvignon Blanc adds zesty, “green” fruit flavors and a mouth filling mid-palate to blends as well as a tingly finish.

Sémillon – The other primary grape in white Bordeaux, Sémillon adds apple and beeswax-like flavors with a rich, full-bodied palate.

There are three styles of white Bordeaux:

Dry, light and fruity
Dry, rich and creamy
Golden-colored, rich and sweet

A

The primary flavors of rosé wine are red fruit, flowers, citrus, and melon, with a pleasant crunchy green flavor on the finish similar to celery or rhubarb. Of course, depending on the type of grape the rosé wine is made with will greatly vary the flavor.

What is Prosecco and how would you describe it?

A

Italy’s number one sparkling wine comes from Northeastern Italy and uses a different winemaking method than Champagne

Prosecco uses the “tank method” which enlists the use of some very high tech fermentation tanks. The tanks were first developed during the industrial era in the late 1800s and are capable of producing wines with up to 4 atmospheres of pressure! And, they’re huge!

What is Champagne and how would you describe it?

A

The most iconic sparkling wine in the world is a blend of grapes including Chardonnay, Pinot Noir, and Pinot Meunier. The most treasured Champagne wines age for a minimum of 3 years.
