Wally’s Burger

A

Brioche Burger Buns Old Amsterdam Gouda, 8 oz Wagyu beef patty from Rocker Brother. Patty is seasoned with salt and pepper on the grill.
Caramelized Onions Heirloom Tomato and Butter Lettuce (House made Pickle on side).
Wally’s Sauce is Béarnaise, tomato and house secret ingredients. A yolk base sauce smeared on top and bottom bun. Served with a side of Pomme Frites. or salad

Prime Rib Eye

A

11 oz prime rib eye medallion with bearnaise sauce, beef jus onion, pommes frites (truffle fries or salad) Caramelized Cipollini onions on each ribeye. Onions are braised and grilled as a whole.

Béarnaise sauce- clarified butter emulsified in egg yolks, white wine vinegar, shallots, tarragon and herbs.

Allergies: dairy, vinegar, pepper, onion, garlic

Wood Oven Seabass

A

Loup de Mer, a wild European seabass off of the coast of Brittany in France. The fish is fillet then deboned. The service is one full size between 18-22oz. Fillet is topped with fennel seeds, salt, pepper and evo. Seabass is wood oven baked with cherry tomato and a half lemon.
Blistered cherry tomatoes and two half lemons are baked in the oven on the same pan as the sea bass
Allergies: seafood, fennel, tomato (nightshade)

Roasted Bone in Whole Chicken

A

Galus Brun is the breed of heritage chicken
The portion size is about 2.5lbs. It’s air dried then poached in chicken stock, then roasted with truffle butter under the skin.
Albufera Sauce is made of chicken jus, black truffle, crème fraîche & secret ingredients.
Smashed fingerling potatoes, forest mushroom and broccolini are served as a bed for chicken

Is a certified Angus beef distributor offering antibiotic- free, hormone-free, and naturally raised

various cuts of aspen ridge steaks served with pomme puree, pomme maxim. 19 oz bone in Filet, 22 oz Delmonico, 29 oz porterhouse (all dry age)
The Cuts are first seared in butter with thyme and garlic. It’s rested in clarified butter then grilled to desired temp.
