Clear unaged spirit without distinct characteristics, flavor, color or aroma
A neutral spirit
Distilled at high proof and processed to extract all flavor
US Vodka
Bottled at minimum 80 proof (40% ABV)
Characteristics of the raw materials must not be present
No distinctive aroma, taste or color
No additives to enhance flavor
Can be infused with flavor after distillation to create flavored vodkas
Produced from any material (wheat, rye, potato, corn, barley, molasses, apples, grapes, etc.
European Vodka
75 proof (37.5 ABV)
Characteristics of the raw material must be selectively reduced
Flavorings can be added
Produced from potatoes, grapes, cereals and/or other agricultural raw materials
Vodka geography and history
Actual origin believed to be Russia or Poland

Vodka Production
Fermentation: 3-5 days
Distillation: pot and column distillation, boils off almost all congeners.
Filtration: removes impurities, NOT required to be filtered
Vodka Congeners
Ethyl - sweet, fruity, rum, fragrant, floral, mild, waxy, soapy
Fussel Oil - whiskey
Acetals - strong, tart, fruity, pungent, coffee
Flavored Vodkas (US)
Can be bottled at 60 proof (30 ABV)
Can have more water or juice
“Natural flavors” does not mean flavors come from actual fruit, herb or spice

Baijiu (shaojiu)
Vodka-like Chinese spirit
Made from sorghum 80-120 proof (40-60 ABV)
Moutai - created in moutai in Guizhou
Shochu
Japanese spirit made from barley, buckwheat, rice or sweet potatoes
Means “burned liquor”
70 proof (35 ABV)
Soju
Korean made from rice, barley or wheat
32-90 proof (16-45 ABV)
Usually served neat but can be used in mixed drinks.
Vodka Martini
3oz vodka
3/4 oz dry vermouth
2 dashes bitters (optional)
Lemon twist or olives
Pour into a shaker filled with ice
Shake well
Strain into chilled cocktail glass
Garnish with lemon twist or olives
Cosmopolitan
1 1/2 oz vodka or citrus vodka 1 oz orange liqueur 1/2 oz lime juice 1/4 oz cranberry juice Orange peel
Shake ingredients with ice in a cocktail shaker
Strain into a chilled cocktail glass
Garnish with orange peel
Lemon Drop Martini
1 oz vodka 1/2 oz triple sec 1 oz lemon juice 1 tsp fine sugar Lemon peel
Shake ingredients with ice in a cocktail shaker
Strain into a chilled cocktail glass
Garnish with lemon peel
Bloody Mary
1 1/2 oz vodka 3 oz tomato juice 1/2 oz lemon juice Dash Worcestershire sauce Celery salt and ground pepper Tabasco (to taste) Horseradish (to taste) Celery stalk and/or pickle Lemon and/or lime wedge
Mix liquid into a highball glass over ice
Stir well
Add seasonings to taste
Garnish
