- Began in late 1870’s.
- 1st commercial distillery Suntory opened in 1923
- Suntory is located in Yamazaki, known for its high quality water.

Japanese Whisky Production
A
- Similar to the production of scotch.
- Barley and peat have been imported from Scotland, when necessary.
- Original goal was to duplicate scotch whisky.
- Distilled twice using pot stills.
- The Japanese place an emphasis on clear, almost transparent worts.
- Japanese distillers rarely sell their whiskies to other distillers so most blends are produced from in-house whiskies.
