They can be hydrogenated- hardened when reacted with hydrogen in the presence of a nickel catalyst at about 60 degrees

How does hydrogenation work?

A

The hydrogen reacts with the double-bonded carbons and opens up the double bonds

Why are hydrogenated oils better than unsaturated oils?

A

They have a higher melting point so they’re more solid at room temperature. This makes them more useful for spreads
