Combine egg yolk, honey, half sugar, salt and vanilla extract, whip until ribbon stage.
Sift the flour and cornstarch.
Whip the egg white with the rest of the sugar.
Fold whites in yolk alternating with the dry mix.
170C for 8 minutes
White Chocolate Whipped Cream
Chop chocolate.
Heat half of heavy cream with sugar in medium heat when it boils turn off and pour over the chopped chocolate
Add the other half of the cream to bring heat down. Whip in ice bath to stiff peaks.
Raspberry And Vodka Coulis
Add the raspberry, strawberry, water, sugar and lemon in a saucepan.
Cook for 10 minutes in medium heat.
Add the vodka.
Blend everything and the strain, cool down in an ice bath.
Lady Fingers
Combine egg yolk, half of the sugar and vanilla, whip until very white and fluffy, ribbon stage.
Sift cornstarch and flour.
Whip egg whites with the rest of the sugar to stiff peaks.
Fold whites into yolk mix alternate with dry mix.
Pour in pastry bags and pipe.
Cook for 8 min at 170 cover with confectioner sugar.
Coffee Syrup
Add water and sugar to a saucepan and let to a boil. Simmer for 2 minutes.
Remove from heat add brandy and espresso.
Cool down and set aside.
Tiramisu Cream
Combine egg yolk, marsala, sugar and instant coffee.
In a double boiler heat until it turns very pale.
Bloom gelatin and then activate with a little of heat.
Add gelatine to the yolk mixture while still warm. Keep whipping until cold.
Fold the yolk mixture into the mascarpone cheese mixture.
Fold in the heavy cream whipped into soft peaks use immediately.
