chocolate Ice Cream

A

Combine milk, heavy cream and half sugar in a sauce pan, bring to a boil. Enjoy the rest of the sugar and egg yolk in a separate bowl. Temper the yolks and then make a creme anglaise. Pour creme anglaise over chopped chocolate. Add cocoa powder blend and then strain.

Spearmint Ice Cream

A

Combine milk, heavy cream, half sugar and spearmint leaves, bring to a boil. In a separate bowl have the yolks and the rest of the sugar. Temper yolks with milk mix and the make a creme anglaise.

Sorbet

A

Italian Meringue might be needed and a basic syrup which has sugar, water, glucose and ice cream stabiliser. Combine water and sugar then in a large sauce pan heat the mix and add the glucose until dissolved.

A

Mix mango pulp, lemon and basic syrup. Process in a blender then make in the ice cream machine.

A

Mix passion fruit pulp, Italian meringue and lemon juice. Process in a blender and then ice cream machine.

A

Mix blackberry pulp, lemon juice and basic syrup. The blend and add to the ice cream machine.

Miloreo Cheesecake

A

Crust: Combine sugar cookies in a food processor until fine. Mix cookie powder with butter cook at 190C 5-9 minutes. Cheesecake: Blend cookies with sour cream and milo. Mix sour cream, creams cheese and sugar in the mixer. Add egg and egg yolk to emulsify. Stir cornstarch, lemon zest and vanilla extract. Cook at 150C until is still runny in the center.

A

Combine in a sauce pan water, cream, sugar and glucose and bring to a boil. Chop chocolate with vanilla extract and cocoa powder set aside. Pour heavy cream over chocolate and emulsify.

NY Cheesecake

A

Crust: process cookies with sugar, then add the butter. Cook for 5-9 minutes at 190C. Cheesecake. Mix sour cream, cream cheese and sugar. Stir egg, egg yolks and heavy cream. Add the cream cheese mixture to emulsify. Stir cornstarch, lemon zest and vanilla extract. Bake at 150C until the center is runny.

Berries Coulis

A

Combine strawberry, blackberry, sugar and water. Then bring to boil and simmer for 10 minutes. Blend mixture and strain.
