Banana cupcakes, nutella filled
Blend banana, milk, heavy cream, butter, vanilla extract and Nutella. Whip eggs, salt and sugar until ribbon stage.
Sift flour, baking powder and add lemon zest, set aside.
Fold 1/3 of eggs mixture to banana mixture alternate with the flour mixture. Fold in the chopped nuts. Bake at 170C
Combine Nutella with heavy cream.
Vanilla Whipped Cream
Scrape seeds from vanilla bean and add to the heavy cream. Then add confectioner sugar, powder milk and vanilla extract. Mix until stiff peaks.
Lemon and poppy seeds cupcakes
Sift flour with baking powder then add sugar. Whip egg, sugar and vanilla extract until ribbon stage. Add dry ingredients in two stages. The add butter in steady stream to emulsify at medium speed in mixer. Add lemon juice and combine. Fold lemon zest and poppy seeds.
Philadelphia Cream cheese frosting
Whip cream cheese until soft. Then add sugar and vanilla extract. Whip until stiff peaks.
Blueberry Muffins
Sift flour, baking powder and then add salt. Whip eggs, sugar and vanilla extract until ribbon stage. Add dry ingredients in two stages. Add melted butter in steady stream. Add milk and lemon zest until combined.
Almond crumble
Mix flour, confectioner sugar, brown sugar, vanilla extract, almond and butter. Combine in food processor until all combined.
Modified Pound Cake
Cream butter, sugar and salt until pale. Add eggs one by one to emulsify right. Combine, milk, vanilla extract and lemon zest set aside. Combine the flour, baking powder and sift, set aside. Then add flour alternate with milk in 3 stages. 170C for 45 minutes.
