Why do vowels contract or form diphthongs?
A
Because cleanly distinguishable back to back vowel sounds are usually trouble to the tongue, morphological logic be damned.

contraction, syllabification, and apocope

A
In order to keep the word as a two-syllable noun just as it was before the σ dropped out between the ε and ο.
