What is the progression Liqueur de Tirage must go through to ensure the yeast thrive and don’t die?

A

Activation
Assimilation
Proliferation
-Activation - yeast is rehydrated with base wine diluted to around 7% ABV and small amount of sugar. When half the sugar has been converted to alcohol by the yeast, it is added to undiluted base wine with a little more sugar, when half of that sugar has been consumed, the process is repeated and this goes on until 5% of the volume of the base wine to be bottled has been achieved (assimilation). During this process, nitrogen and other nutrients might be added.
This is the most classic and widely practiced bottling procedure, but has a disadvantage of creating an uneven amount of oxygen pickup.

Clear, Odorless, tasteless, and neutral in acidity. it is natural grape sugars, glucose and fructose. Using this is possible to use zero SO2 in the Liqueur de Tirage.
