-After Sobretablas the wines are then classified a second time
What are the Sobretablas classifications
-Palma (good flor, Fino style)
-Palma Cortada (more robust, will become Amontillado)
-Palo Cortado (Richness redirects wine toward Oxidative style)
-Raya (No flor, wines become oloroso)
-Dos Raya (no flor, and corse. These become low quality sweetened sherries or sherry vinegar)
