Tequila
Can only be made from the blue agave plant
Process
After agave is grown for more than a decade it’s cooked and shredded before the juice can be extracted for fermentation
It is produced in 5 states Jalisco, Guanajuato, Michoacán, Nayarit and Tamaulipas
Tequila must had ABV between 35-55 percent
Categories
-100% Agave
- Mixto
100% Agave
Higher quality tequilas are distilled twice using only blue agave and without adding sugars of any kind
Mixto
Made from at lease 51% agave, mixtos may contain up to 49% other sugars. Often low quality spirits
Aging
Silver- no aging, though sometimes rested in neutral holding tanks for up to two months
Gold- aged in oak barrels for at least two months and up to one year
Anejo- aged in oak barrels for at least one year and up to three years
Muy Anejo- aged in oak barrels for at least three years
Brands
Jose Cuervo, patron, don julio, Hornitos, Cazadores
Mezcal
Can be made from several different types of agave
The cooking process happens in pots filled with hot rocks where the agave is cooked for several days giving Mezcal its Smokey flavor
Mostly manufactured in Oaxaca as well as Durango, Guanajuato, Guerrero, San Luis potosi, etc
Sotol
A distilled spirit sourced from the sotol plant which grows in northern Mexico and southwestern US
It is the state spirit of Chihuahua, Durango and Coahuila
