Craft cocktail
A cocktail that uses fresh ingredients
Making fresh sweet and sour
-1/4 pt lime juice
-1/4 pt lemon juice
1 1/2 pt simple syrup
Or
-1/3 pt agave, OJ, lime juice
(Shelf life around 2-3 weeks)
Percolation
Similar to how coffee is made, put your ingredients in a coffee filter and pour liquor through it enough times until you get infused alcohol
Maceration
Put your liquor in a bigger container add your infusing ingredients and let it sit for a period of time
Simple syrup
Mixture ratio 1:1 of water and sugar used as a sweetener for many classic cocktails
Bitters
A bartenders spice rack
Juices and spices
Always used fresh pressed juice when possible! That way it’s fresh and pure with no added ingredients
Examples of some spices: cinnamon, ginger, lavender, mint herb, rosemary, vanilla bean
Egg whites
Add a consistency to a drink that can’t be substituted by any other ingredient.
-must be shaken vigorously
Making a true whiskey sour
One egg white per cocktail
Shake egg whites for 25-30 secs
Whiskey history
“Water of life”
did not have a distillation process so it was very strong and potent. Over the years it’s become a lot smoother. Old bush mills distillery is the oldest licensed whiskey distillery in the world
Whiskey process
Mashing, fermentation, distillation and aging
Usually used copper since it removes sulfur based compounds
Common stills are pot still and column still
Whiskies mature in a cask so the age of whiskey is only the time between distillation and bottling
Aging whiskey: 6 processes extraction, evaporation, oxidation, concentration, filtration and coloration
American Whiskey
Is distilled from a fermented mash of cereal grain
Bourbon whiskey- made from a mash of 51% corn
Corn whiskey- made from a mash of 80% corn
Malt whiskey- made from a mash of 51% malted barley
Rye whiskey- made from a mash of 51% rye
Wheat whiskey- made from a mash of 51% wheat
Blended whiskey- a mixture that contains a blend of straight whiskey and neutral grains spirits
Sour mash- process used in distillery that uses materials from an older batch of mash to start fermentation of a new batch
Canadian Whiskey
Must be produced aged in Canada
Be distilled from a fermented mash of cereal grain, be aged in wood barrels no less than 3 years
Usually contain caramel and flavoring in addition to the distilled mash spirits
Brands: crown royal, Seagrams, Canadian club
Irish whiskey
Are normally distilled 3x
Irish whiskey must be produced in Ireland and aged in wooden casks for a period no less than 3 years
Brands: Jameson, bush mills, redbreast
Japanese Whiskey
Model for Japanese whiskies is the single malt scotch. The base is a mash of malted barley dried in kilns fired with a little peat and distilled using the pot still method
