Rum
Made from sugarcane byproducts such as molasses or sugarcane juice. The majority of rum production occurs in the Caribbean or Latin America
Must be aged for at least a year. Aging commonly occurs in bourbon casks
After aging rum is blended to ensure a consistent flavor. Blending is the final step in producing rum. Light rums may be filtered to remove any color gained during aging while dark rums may add caramel to adjust color

Dark rums
Usually made from caramelized sugar or molasses
Usually aged longer in heavily charred barrels giving them a more potent flavor
brands: Meyers, Goslings Black seal
Gold Rums
Gain their dark color from aging in wooden barrels
They have more flavor and are stronger tasting than light rum
Brands: Bacardi Gold, Goslings Gold seal
Light Rums
Very little flavor aside from general sweetness
Sometimes filtered after aging to remove any color
Their mild flavor makes them more popular for mixed drinks
Brands: Bacardi superior, Ron rio
Overproof Rums
Much higher than standard 40% ABV, usually go as high as 75%- 80% ABV
Usually used in mixed drinks as a float
Brands: Bacardi 151 (discontinued), Cruzan 151 or pitorro moonshine
Spiced Rums
Obtain their flavor through the addition of spices and sometimes caramel
Most are dark in color based on gold rums
some are significantly darker while cheap brands are made from white rums darkened with caramel color
Brands: Captain Morgan, sailor Jerry’s, kraken
Flavored Rums
Liqueurs made with Caribbean rum
Usually have a lower ABV than typical rum
Brands: Malibu, Cruzan, Rumchata
